Black Bean Rayu

Chinese black beans form the base of this rayu. Mixed with infused chilli and warming spices like star anise & cinnamon. A little goes a long way.
PS. It’s also Michel Roux’s desert island ingredient. He says: "Other than a bottle of champagne for an emergency, the one thing I always have in my store cupboard is a jar of White Mausu Black Bean Rayu... The black beans have such a depth of flavour, and the kick of chilli livens up any dish."
Ingredients: Sunflower Oil, Fermented Black Soy Beans (13%), Black Sesame Seeds (3.5%), Chilli Flakes (12.5%) [Red Chilli Flake, Korean Chilli Flake], Tamari Soy Sauce, Fried Garlic [Garlic, Sunflower Oil], Raw Cane Sugar, Sichuan Pepper, Sea Salt, Spices.
